Baked Blueberry Oatmeal

Ingredients

  • 1 purple container blueberries
  • 4 yellow containers of oatmeal  (4 1/3 cups)
  • 2 red containers of dried cottage cheese curds
  • 4 eggs
  • 3 1/2 yellow containers of water
  • 1 tsp vanilla extract
  • 1 1/2 Tbsp cinnamon
  • 1/2 tsp salt
  • 1/3 cup maple syrup
  • 1 tsp baking soda
  • 1/2 tsp baking powder

Directions

Mix everything into bowl, and pour into an greased 8 x 8 baking pan. Bake at 375 degrees for 30-40 min. Should spring back when pressed in center when its finished baking.

Pork Chops in Mushroom Gravy

Ingredients

  • 2- 4 pork chops
  • 1 medium onion sliced
  • 2 cups mushrooms sliced
  • 1 tsp cornstarch
  • 1/2 cup cold water
  • 1/4 cup cashew milk
  • 2 cup chicken broth
  • salt and pepper to taste

Directions

  1. pre-heat oven to 400 deg
  2. brown pork chops on both sides in skillet on med high, transfer pork chops to plate to rest while you cook the mushrooms or place in a baking dish if you do not have a cast iron skillet
  3. place mushroom and onions in skillet and 1/4 cup of the water and saute for 5 mins
  4. in separate bowl combine cornstarch and 1/4 cup cold water mix till combined, pour over mushroom and onion mixture, and then add 2 cups of chicken broth
  5. place pork chops back in pan and transfer to the oven
  6. bake at 400 for 30 min -40 mins depending on thickness of pork chops. When no longer pink inside they are done
  7. take pork chops out pan and put on plates, mix in the cashew milk into the mushroom onion mixture, salt and pepper and plate over top pork chop.

  • 1/3 cup dry oatmeal
  • 3 tbsp dry curd cottage cheese
  • 1/8 tsp baking powder
  • 3/4 cup water
  • 12 cherries pitted
  • 1 egg
  • 1 tbsp maple syrup

Directions

  1. Preheat the oven to 350, and line or grease a oven safe dish.
  2. Place all ingredients in separate bowl and stir together
  3. Pour everything into oven safe single dish like a ramekin dish
  4. Bake 30-40 mins making sure it is cooked all the way through, It should bounce back after its cooked.

Broccoli, Mushroom and Ham Quiche

Bake 350 for 35-40 mins

Ingredients

  • 10 eggs
  • 2 red containers Dry curd cottage cheese or 1 1/4 cups cottage cheese curds
  • 6 slices or 1 container of ham
  • 3 cups chopped Broccoli
  • 1 cup chopped mushrooms
  • 1 medium onion chopped
  • 1 clove garlic minced
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp oil  1/2 tsp for sauteing veggeis and 1/2 tsp for greasing pie plate

Directions

  1. Grease 9 inch pie plate, Preheat oven to 350 degrees celus
  2. lightly saute broccoli, onion and mushrooms till tender add minced garlic
  3. In separate bowl place eggs and whisk till combined, add Cottage cheese curds and ham cut into bite size pieces
  4. when veggies have finished sauteing, place them in greased pie plate, pour egg mixture over top
  5. Bake 35-40 min or until center is cooked. Test with knife.
  6. Slice into 8 pieces

2 slices = 2 red, 1 green

1 slice = 1 red, 1/2 green

Zucchini Soup

Zucchini Soup

4-6 Servings depending on size of zucchinis

Ingredients

  • 1 Large Zucchini or  4 smaller ones
  • 1 medium onion
  • 2 garlic cloves
  • 4 cups chicken broth or vegetable broth
  • salt and pepper to taste
  • 1 tbsp. Sour cream or plain Greek yogurt (optional great with or without)*

Directions

  1. Chop everything up in big chunks don’t worry about cutting into tiny pieces and toss in big pot. Except the sour cream or yogurt.
  2. Boil till soft about 20-30 minutes .
  3. Cool down a bit enough to puree it and then add sour cream or yogurt.

*sour cream is not 21 day fix friendly! Plain Greek yogurt is.

Lemon Chicken


Lemon Chicken

Ingredients

  • 2 chicken breasts
  • Coating Ingredients
  • 1 eggs
  • 1 tbsp cornstatch
  • 1 tbsp water less or more

Lemon Sauce

  • Juice of 1 or 2 lemons
  • 1/2 tsp cornstarch
  • 1/4 cup chicken stock
  • 1 tbsp cooking oil

 

Directions

  1. Cut chicken into large chunks, or thin strips
  2. Mix egg and first amount of cornstarch. Add a little water if it needs it. You want it fairly runny.
  3. Add 1 tbsp oil to pan or wok. Fry chicken until it is golden.
  4. In the meantime, combine lemon juice, and chicken stock in small bowl with cornstarch and mix.
  5. Pour lemon mixture over cooked chicken and let simmer for a few moments until sauce has thickened.

Ingredients

  • 2 pounds pork tenderloin
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 clove garlic, minced
  • 1 tsp olive oil
For the Glaze
  • 2 tbsp coconut sugar / may use brown sugar
  • 1/3 cup maple syrup
  • ½ cup cold water
  •  1 tsp cinnamon

 

Directions

  1. Pre-heat oven to 400 degrees Celsius.
  2. In a large skillet over medium-high heat, add the olive oil and heat. Add the minced garlic and saute, stirring, for 1 minute. Put tenderloin in cast iron pan and cook for about 10 minutes, searing each side using tongs to turn the meat.
  3. In separate bowl mix together the glaze
  4. Pour glaze over roast and bake for 20 minutes. Let rest 5 mins.
  5. Slice and serve.

  • 1 green container of cucumber chopped
  • 1/2 green container of tomatoes chopped
  • 1/2 tsp olive oil
  • 1 tsp red wine vinegar
  • 1 tsp Greek Seasoning

Directions

Place all ingredients in bowl and stir, place in fridge for 20 min to let marinate together!

Maple Ginger Salmon


Maple Ginger Salmon

Serves 4

Ingredients

  • 1/4c maple syrup
  • 2Tb soy sauce or coconut aminos
  • 2tsp fresh ginger minced
  • 2tsp fresh garlic minced
  • 1 lb salmon
  • pepper

Directions

  1. Preheat oven to 400
  2. In a 9×13 baking dish, lightly pepper the salmon on both sides. If using low sodium soy sauce, salt the salmon to taste.
  3. In a bowl or measuring cup, combine the syrup, soy sauce, ginger and garlic, whisk together.
  4. Pour the mixture over the salmon and let marinate for 20 min. You may marinate for up to 30 min. May also reserve half for pouring over after salmon is done cooking.
  5. Bake salmon at 400 for 20 min
  6. Use remaining drippings to top off Salmon before serving!

Ingredients

  • 2 Slices whole wheat bread ( I used a whole wheat one that are only 60 calories per slice so only counts as 1 yellow)
  • 3 slices low sodium low fat ham
  • 1 Swiss Cheese slice halfed
  • 1 tsp mustard
  • 1 egg

Directions

  1. Spread bread with mustard. Alternate ham, Swiss and ham slices on bread.
  2. Beat egg in a small bowl. Coat the sandwich with the egg flipping it on both sides.
  3. Heat a greased skillet over medium heat, brown the sandwich on both sides. Serve hot.
