Serves 6

Ingredients

  • 1 pound ground beef cooked
  • 1 jar tomato sauce (*homemade or store bought)
  • 500 gr dry curd cottage cheese*
  • 2 cups shredded mozzarella cheese or Italian blend
  • 9-12 oven ready lasagna noodles or pre-make noodles beforehand

Directions

  1. cook ground beef, and place tomato sauce with ground beef in frying pan
  2. spray or grease a 8×8 pan and preheat oven to 425 °c
  3. place 3 noodles on bottom of pan and then layer with ground beef then a layer of cottage cheese then 1/2 cup of shredded cheese approx 3/4 cup of ground beef and cottage cheese, then repeat with noodles and ground beef sauce mixture and then cottage cheese etc, until you have used up everything saving most of the shredded cheese for the top of the lasagna. You should end up with 3 layers.
  4. Place tin foil over pan and place in oven for 45 minutes, last 10 min take tin foil off and let top get browned a bit!!
  5. Let rest for 20 mins covered to let sauce settle and not be runny!!
  6. Slice into 6 pieces

Container counts

1 square = 1 red, 1 yellow, 1 blue, 1 green if using homemade sauce*

1 square = 1 red, 1 yellow, 1 blue, 1 purple if using store bought sauce*

*may sub dry curd cottage cheese for regular cottage cheese just rinse and dry before placing in lasagna. May also use ricotta cheese!

Baked Blueberry Oatmeal

Ingredients

  • 1 purple container blueberries
  • 4 yellow containers of oatmeal  (4 1/3 cups)
  • 2 red containers of dried cottage cheese curds
  • 4 eggs
  • 3 1/2 yellow containers of water
  • 1 tsp vanilla extract
  • 1 1/2 Tbsp cinnamon
  • 1/2 tsp salt
  • 1/3 cup maple syrup
  • 1 tsp baking soda
  • 1/2 tsp baking powder

Directions

Mix everything into bowl, and pour into an greased 8 x 8 baking pan. Bake at 375 degrees for 30-40 min. Should spring back when pressed in center when its finished baking.

Gingerbread Shakeology Balls

Ingredients

  • 1 scoop vanillaShakeology
  • 1 blue container *Almond flour
  • 1 tsp molasses *may use maple syrup
  • 2 tsp water
  • 2 dried dates
  • 1 tbsp gingerbread spice
  • 1 tsp fresh grated ginger

Directions

  1. Place all ingredients in food processor except water and process until crumbly. Slowly add tsp’s of water less or more depending on how fresh dates are.
  2. when dough sticks together the dough is ready.
  3. roll into 4 balls.

For 2 Balls

1/2 purple, 1/2 blue, 1/2 red

For 4 Balls

1 purple, 1 blue, 1 red

*molasses is not 21 day fix approved but Maple syrup is!

*Almond flour can be made by pulsing almonds in food processor or purchased in store.

Maple Ginger Salmon


Maple Ginger Salmon

Serves 4

Ingredients

  • 1/4c maple syrup
  • 2Tb soy sauce or coconut aminos
  • 2tsp fresh ginger minced
  • 2tsp fresh garlic minced
  • 1 lb salmon
  • pepper

Directions

  1. Preheat oven to 400
  2. In a 9×13 baking dish, lightly pepper the salmon on both sides. If using low sodium soy sauce, salt the salmon to taste.
  3. In a bowl or measuring cup, combine the syrup, soy sauce, ginger and garlic, whisk together.
  4. Pour the mixture over the salmon and let marinate for 20 min. You may marinate for up to 30 min. May also reserve half for pouring over after salmon is done cooking.
  5. Bake salmon at 400 for 20 min
  6. Use remaining drippings to top off Salmon before serving!

Ingredients

  • 2 Slices whole wheat bread ( I used a whole wheat one that are only 60 calories per slice so only counts as 1 yellow)
  • 3 slices low sodium low fat ham
  • 1 Swiss Cheese slice halfed
  • 1 tsp mustard
  • 1 egg

Directions

  1. Spread bread with mustard. Alternate ham, Swiss and ham slices on bread.
  2. Beat egg in a small bowl. Coat the sandwich with the egg flipping it on both sides.
  3. Heat a greased skillet over medium heat, brown the sandwich on both sides. Serve hot.

Coconut Shrimp

Ingredients

  • 12 medium shrimp, peeled tails off
  • ¼ cup panko
  • 2 tablespoons shredded, unsweetened coconut (1 orange container, packed)
  • 1 egg
  • 1 teaspoon honey
  • Lemon wedges to squeeze over top of the shrimp after baking (optional)

Directions

  1. Preheat your oven to 400 degrees
  2. In a bowl, whisk together your egg, honey, and some salt and pepper
  3. In another bowl, stir together your panko, coconut, and some salt and pepper
  4. Line a baking sheet with parchment paper and set it near your breading station
  5. One at a time, dip each shrimp (holding it by the tail as you do) into the egg until it is coated, holding it up above the bowl until all excess egg has dripped off, and then transfer it to the panko/coconut bowl
  6. Turn the shrimp over and over until the coconut and panko have lightly coated its surface. It is helpful to press some of the breading onto the shrimp with your fingers to help it stick more efficiently
  7. Place each breaded shrimp onto your parchment lined baking sheet
  8. Place in the oven and bake for 5 minutes. Remove, flip each shrimp over, and bake for another 5 minutes
  9. Serve with lemon wedges to squeeze over the shrimp.

  • 2 tsp veg oil
  • 1 yellow container cooked rice
  • 1 green container worth of veggies like carrots and celery, mushrooms, onions, broccoli 
  • 1 red cont cooked chicken
  • 1 egg
  • 2 tsp Soy sauce  
Directions
  1. Heat oil
  2. add veggies and stir fry.
  3. Add rice and chicken and continue to cook.
  4. Add 1 beaten egg and once the egg is cooked, add soy sauce.

1 green, 1 yellow, 1.5 red, 2 teaspoons

Ingredients

  • 1 1/2 cups canned pumpkin puree (NOT PIE FILLING)
  • 1/4 cup maple syrup
  • 2 eggs
  • 3/4 cup oat bran (oat flour)*may grind oatmeal in blender as well
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tbsp Pumpkin Spice

Directions

  1. Preheat oven to 350 degrees Celsius
  2. Mix all wet ingredients in bowl. Pumpkin, eggs and maple syrup
  3. In separate bowl mix remaining dry ingredients together
  4. Place wet ingredients in with dry ingredients and mix till combined
  5. Place muffin liners in muffin pan, I like to use Parchment paper ones as they don’t stick to anything love them!!!
  6. Pour batter evenly into 12 muffins
  7. Bake in over for 25-30 mins , cool and place in fridge!

1/2 Green for 1 muffin

BBQ Sauce Homemade style!

Clean-eating/21 Day Fix-Approved BBQ Sauce

Ingredients

  • 1/2 cup water
  • 1/4 c tomato paste
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp maple syrup (or raw honey)
  • 2 tsp coconut aminos or low-sodium soy sauce
  • 1 clove garlic, pressed or minced
  • 1 tsp onion powder
  • 1/8 tsp cayenne pepper
  • 2 tsp extra virgin olive oil

Directions:

Pour 1/2 c water into a small saucepan. Add all of ingredients except the olive oil and whisk together. Bring the sauce to a boil and continue boiling for 3 to 4 minutes. Remove from heat and slowly stir in the olive oil. Store in fridge in glass container.

Ingredients

  • 1 large pita
  • 6 slices low fat/sodium ham
  • 2 tbsp Pizza Sauce
  • 1/2 purple container pineapple
  • 1 blue shredded cheese

Directions

  1. Place pizza sauce on pita
  2. Top with meat and pineapple and cheese
  3. Place in oven on broil for 2 mins or to your liking
  4. May substitute pita for flat out wrap if only have one yellow container
