Maple Glazed Pork Roast

serves 4


  • 2 pounds pork tenderloin
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 clove garlic, minced
  • 1 tsp olive oil
For the Glaze
  • 2 tbsp coconut sugar / may use brown sugar
  • 1/3 cup maple syrup
  • ½ cup cold water
  •  1 tsp cinnamon



  1. Pre-heat oven to 400 degrees Celsius.
  2. In a large skillet over medium-high heat, add the olive oil and heat. Add the minced garlic and saute, stirring, for 1 minute. Put tenderloin in cast iron pan and cook for about 10 minutes, searing each side using tongs to turn the meat.
  3. In separate bowl mix together the glaze
  4. Pour glaze over roast and bake for 20 minutes. Let rest 5 mins.
  5. Slice and serve.
