Banana Muffins

21 Day Fix

makes 12 muffins

1 muffin equals 1 serving

Ingredients

  • 3-4 medium ripe bananas
  • 2 eggs
  • 1/4 cup maple syrup or honey
  • 1 1/2 cup oat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon

Directions

  1. In large bowl, mash bananas
  2. mix in syrup and eggs
  3. In sepaerate bowl mix oat flour baking soda, salt and cinnamon
  4. place dry ingredients into wet ingredients and stir
  5. place muffin liners into muffin tin, I like to use parchment paper ones so you don’t have to use non-stick spray or oil
  6. scoop level amounts into each muffin
  7. Place in oven at 350 degrees for 20-30 mins. Check with toothpick to make sure they come out clean

1 serving equals

1 purple, 1/4 yellow
