Breakfast Scramble

Single Serving 

21 Day Fix Approved


1 yellow cup Hash browns (potato cut up onto small squares)

1 green cup worth of veggies. I mixed onions, peppers, mushrooms

1/2 green cup tomatoes

2 eggs (1 red cup)

2 turkey bacon slices (1/2 red cup)

1/2 blue cup shredded cheese


Place hashbrowns and veggies (excluding tomatoes unless you like them cooked) into pan. I use cast iron so I have no need for oil for sticking. Cook until soften. Add Turkey bacon and cook until browned.

Fry eggs or scramble and then place on top of veggie and hash brown mixture.

Top with tomatoes and cheese.


1 1/2 green, 1 1/2 red, 1 yellow, 1/2 blue
