Zucchini Soup and Sticks




Does anybody else still have an abundance of zucchini well I sure do.  Still trying to use them up that for sure.  As I was looking through #DAMY Health’s Website I thought well look at that there is a   Cheesy Zucchini Stick Recipe I thought well that will help use up some and they sure were tasty!  Paired with a little marina sauce and I was good to go a nice little snack.

I also made this Zucchini soup the other day as well its so good. Its one of my favourite go to soups and its so easy just throw it all in a pot for like 20 min and then puree it and your all done.


Zucchini Soup 

1 Large Zucchini or  3 smaller ones

1 medium onion

2 garlic cloves

4 cups chicken broth or vegetable broth

salt and pepper to taste

1 tbsp. Sour cream or plain Greek yogurt (optional great with or without)

Chop everything up in big chunks no worry about tiny pieces and toss in big pot. Boil till soft about 20-30 minutes .

Cool down a bit enough to puree it then serve.

Makes 4 servings

I paired it with some awesome Cheesy cauliflower bread sticks from DAMY Health this was a great meal on a cold rainy day!!
