Oh yah I did it!! Ok I was really wanting a burger last night and didn’t want to do the whole eat it with lettuce as the bun, BORING!! I needed the eat the burger with my hands feeling and this did exactly that!! Only downside was no cheese on the burger lol, Ill take it!!
Basically I took DAMY Health’s Cauliflower rice recipe and add shaped it into burger bun shapes! Yeah its that easy. Also when using your cottage cheese try using the dry curds. If you can’t find the dry curd cottage cheese place your cottage cheese in a strainer and rinse off, and then pat dry, you want this to be dry so it holds together good. I’m not going to lie at the end of the burger experience it got a little messy but so worth it! Also VERY filling with out all the bloatly feeling you get from eating all that bread from a bun.!!
Cauliflower Burger Buns
makes 4 or 2 burger bun sets
2 cups cauliflower rice
1 cup dry curd cottage cheese
1/2 cup egg whites
1/2 cup parmesan cheese
1 tbsp focaccia spice ( any herb spice would be good here)
Place mixture in bowl stir form into round circles place in over at 350 for about 40 mins you want them to be good and stuck together, but not burnt, Just keep checking them as every oven is different.
Let them cool a bit they set better this way!! Then pile on your toppings as normal well try to be healthy and please try and uses real burger patties that are homemade. We had some made from a butcher when we bought our cow a while back. So WORTH IT!!!
Another great tip is to cook these bad boys on parchment paper then they don’t stick!! Trust me well worth it they slide right off there no spray needed!!
