Cauliflower Muffins

WOW these are sooo good not sure why I have never made these before!! These will now become a staple for me I’m sure, mostly because you can switch up the flavour so easily just by switching a few spices or adding in a few things, honestly its just that easy!!

Basically you need to start with Cauliflower rice, WHAT IS THAT? I know that’s what you are all thinking. Basically its grated cauliflower to look like rice.

Using these simple recipes I came up with these cauliflower muffins. I don’t know abut you but I love the biscuits at red lobster and that what made make this flavour. My recipe is super easy too!!

I now have all these flavour combinations in my head and I’m sooo excited to try them. My Girlfriend actually made these last night using broccoli and she said they were equally delish!!

Cauliflower Muffins

makes 12

2 cups cauliflower rice

1 cup cottage cheese

1\2 cup egg whites

1/4 cup grated cheese

2 tbsp parsley, garlic powder,  ( I used epicures herb & garlic blend)

 

preheat oven 350, put all ingredient’s in bowl and mix together , scoop into muffin tin or papers remember to spray lightly with oil or pam to make these not stick or do what I did and purchase parchment paper liners these are awesome, no oil required!!

Cook in oven for aprox 30 to 40 min depending on how crispy or moist you want them just test them with a toothpick to make sure they are cooked in middle.

Sprinkle with cheese on top.

Now eat them up!!
