You know its not easy taking a picture of a bowl of soup! I’m not the best photographer but just so you know this soup is delish!!
Cream of Broccoli and Cheddar Soup

makes 4 servings
- 1/2 small onion
- 8 cups or 3 Heads of Broccoli
- 2 cloves of garlic minced/chopped
- 1 box of Fat Free reduced sodium Chicken Stock
- 2 Tablespoons Greek Yogurt
- 1 blue container of cheese of choice
- dash hot sauce (to taste) * optional
Combine the first four ingredients in pot and cook on med till broccoli and onions and garlic are tender about 20 mins.
Puree then add Greek Yogurt and Cheese using an immersion blender or food processor.
add the rest of the ingredients to season to taste.
