Some of the BEST!! stir-fry’s are the ones that are just plain and simple with not allot of ingredients. One of my most favorite vegetables in a stir fry is Bok Choy. I like to buy the baby Bok Choy there isn’t allot of cutting involved with it and it tastes great!
Stir-fry’s are also a great way to get rid of the veggies that are starting to go bad, you know the ones I’m talking about. The ones you bought at the beginning of the week that you had full intentions of eating because this week you are starting to eat healthy! This week your going to do it, you going to go buy a whole bunch of fruit and vegetables and your going to just eat that all week!! But we all know how that goes you know I’m right! Well here’s your solution chop them up toss them in a pan and stir fry those bad boys!! Toss in a little bit of garlic and ginger and your done! You could add a sauce if you want but I honestly prefer to just at a little bit of garlic and ginger and when I fry up the veggies instead of oil I pour a little bit of chicken broth in there you have it your sauce! You know what else is super good Sherry Cooking Wine mmmmm delish! You can find this at most grocery stores.
Bok Choy Stir Fry
4 Skinless Boneless Chicken Breasts
1/2 Onion sliced
1 box mushrooms or about 10- 15 sliced up
1 bag Bok Choy our about 10 bundles, if you can only find big use one bundle and cut up in chunks. remove bottom of both.
1/2 cup Chicken broth low sodium
2 tbsp Sherry Cooking Wine
2 tbsp minced garlic
2 tbsp minced ginger
- Cook Chicken till no longer pink, cut up in small chunks. Set aside.
- place onions and mushrooms into pan, pour in chicken broth garlic and ginger into pan, fry till almost tender or to your liking
- now place in Bok Choy and pour in your cooking wine
- place chicken back in pan and cook till your Bok Choy is wilted
- place over rice or brown rice noodles these are delish and eat it up!
Get creative stir fry’s are so easy, you really cant mess them up!!
