Pudding and Granola Bars Oh my!

 

Avocado Chocolate Pudding

I bet you could never guess that this pudding is made out of Avocado’s  SAY WHAY!! Yes that is true and you honestly can’t taste them at all!! I love it its sooo rich and thick like cake batter even mmmm!!  I’m pretty sure there isn’t a recipe that Amy over at DAMY Health has come out with that I haven’t truly loved!  You can check out the recipe for this pudding here.

No Bake Granola Bars

Lately I have been craving granola bars and lets face it the stuff in the box is full of stuff you don’t need and its more fun to make your own because you can add what ever you want in them! All you need is a sticky base and you can just add your ingredients from there.

Honey Almond Granola Bars

Makes 18 bars

Ingredients

2 cups oats

2 cups brown rice cereal

1/2 cup Raisins

1/2 cup coconut

1/4 cup slivered almonds

2/3 cups honey

2/3 cups almond butter

2/3 cups brown sugar or Sucant

1 tsp Vanilla extract

1/4 tsp Salt

1/4 tsp Cinnamon

Directions

Place wax paper in a 9×9 pan making the wax paper longer on the ends so you are able to flip over on top of the bars to help press them down nicely with out getting to sticky.

In a large bowl mix all the dry ingredients except brown sugar and salt and set aside.

In a small sauce pan place honey, brown sugar and salt, bring to a medium boil. Remove from the heat and add the  almond butter  till melted and creamed together nicely with no lumps. now add the vanilla and stir.

Pour the mixture over the dry mix and stir till all combined. Place everything into pan and spread out evenly and press down the top nice and hard by playing the wax paper over top and press firmly with hands. Place in fridge or at least an hour or longer. 

You can store these in the fridge or at room temperate. I place these in individual snack baggies in the fridge.

 

I bought myself a little present the other day, well it isn’t really little but I finally bought myself a food dehydrator. I’m so excited, Now I can make Kale Chips and Apple chips and so many other fun foods. So watch out for these things in the near future!! I should have a Kale Chip one for you out tomorrow!!
